Avocado Mandarin Salad recipe - 136 calories
Ingredients:
- 1 rip avocado, peeled and sliced
- 1 (11 ounce) can mandarin oranges, drained
- 1/2 cup coarsely chopped toasted pecans
- 1/2 cup sliced green onions
- 4 cups salad greens
- 1/4-1/2 cup Italian salad dressing
- 1/8 teaspoon pepper
- salt, to taste
Preparation:
- In a bowl, combine the mandarin oranges, pecans, green onions, salt and pepper.
- Refrigerate for at least 30 minutes.
- When ready to serve, place the greens in a salad bowl; top with the avocado slices and orange mixture.
- Drizzle with the Italian dressing; toss and serve.
